Grown from seed at our small nursery in Derbyshire these collards are mostly associated with Creole and southern American cuisine. Traditionally they are cooked with ham or bacon, onion, garlic, and sometimes chillies, or a vegetarian version can be made by slow simmering them with garlic, juicy tomatoes, tamari or soy sauce, and smoked paprika.
They’re often eaten as the main part of a meal, as well as being eaten as a side dish. They are a staple in Brazilian and African cooking too, and can be simply stir fried in olive oil with a little garlic, then finished with lemon juice.
Apparently Collard Greens are extremely nutrient-dense, high in vitamins K, A, E, manganese, calcium, b vitamins, iron, and fibre.
