Purslane, Portulaca oleracea, is an edible, leafy, frost-tender plant widely used as an herb and salad vegetable. The fleshy reddish stems are densely clothed with lobed green leaves and grow to 15-20cm high. Purslane plants grows quickly and leaves are ready to pick in just a few weeks.

The plants are ideal for adding to your herb garden or as a decorative and edible plant in mixed borders. They do best in well drained soil in full sun.

The plants have green leaves that are edible and nutritious, making them a great addition to salads and sandwiches. They have a flavour which some say is similar to green apples. The tangy taste is strongest in leaves harvested early in the day.

Purslane is a good source of omega 3, vitamin A, B and C and is a rich source of antioxidants. It is a source of oxalates so people avoiding these may want to limit their consumption.

Harvest young leaves to eat raw in salads and sandwiches, and older leaves and stems to cook in soups, stir-fries, and stews.
